One of the challenges with having your own hens and fresh eggs has always been the difficulty of boiling and peeling their egg shells to prepare for beautiful deviled eggs! Here is my work around that produces picture-perfect boiled eggs using day old eggs!
- I steam my fresh eggs because it’s a lot more gentle and it gets the job done thoroughly. I put the eggs in a rice/vegetable steamer and set it for 30 minutes.
- As soon as the eggs are finished steaming, place them in ice water for 15 minutes. Take them out of the ice water and peel carefully. The results are pretty much fullproof in producing beautiful eggs!
