Pressure Canning Corn

Our experiment with Virginia White Gourd Corn was very successful this year. It grew to be about 12 feet high with 2 ears per stalk. We harvested in the beginning of July with no worm problem at all and no sprays. The corn was at its young “milk” stage and had a very nice sweet flavor. It was blanched. cut off the ears, and canned. Some of the cut corn was vacuum packed and frozen, and we are eager to compare the two preservation methods as we did with the green beans.

We also have some dried corn to cook, following the process of nixtamalizationThe purpose of this extra step of processing is to determine if some freshly ground corn can make some extra special crackers using my pasta roller!
